Bell Pepper “Nachos”
While the meat is browning, chop up the ½ onion. Add in onion and cook until translucent. Add in taco seasoning, and add a bit of water if needed to combine well. In the meantime, remove the tops and seeds from bell peppers + cut in quarters. Lay in a baking pan/sheet. Scoop meat filling into each bell pepper half. Sprinkle with cheese or nutritional yeast. Stick it in the oven on broil for a few minutes to soften up the peppers. Add your toppings — I did plain Greek yogurt, salsa, cilantro.
