RECIPE - 69. Pumpkin Coconut Fluff Parfait

The subtle taste of pumpkin folded in with the sweetness of coconut and maple makes for fall fluff we'd like to be apart of every recipe. The perfect balance of sweet and tangy, this parfait is a fall favorite we will be eating every morning! Dust with cinnamon and serve.

  • Canned coconut milk
  • 100% pure pumpkin puree
  • Pure maple syrup
  • Greek vanilla yogurt
  • Granola

 

  1. Start by leaving the canned coconut milk in the fridge over night.
  2. In a chilled bowl, scoop out the coconut cream that settles at the top of the can.
  3. With a mixer, whip the cream until peaks form -about 3 minutes.  
  4. Fold in the pumpkin puree and 1 tbs. of maple syrup ( you can always add more if you like it sweeter).
  5. In a bow or mason jar, layer the pumpkin fluff, yogurt, and granola as desired.
