RECIPE - 64. Fruit Pizza

This 4th of July keep your cool but impress your guests with this beautifully simple dessert. Get ready to play with your food again, too, because you'll be getting creative with your fruit!

  • 1 pkg. (16.5 oz.) refrigerated sliceable sugar cookies, sliced
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1 cup sliced strawberries
  • 2/3 cup blueberries
  • 1/2 cup blackberries
  • Raspberries or any other fruit you like (kiwis or mandarin oranges are also good)

Double the cream cheese, sugar, and vanilla for an extra creamy layer (you may not use all of it).

 

  1. Heat oven to 375°F.
  2. Line 12-inch pizza pan with aluminum foil; spray with cooking spray. Place cookie dough slices in single layer on bottom of prepared pan; press or roll to completely cover bottom of pan. Bake 14 min. or until edge is lightly browned; cool completely.
  3. While the cookie's baking, use your idle time to wash your fruit and slice the strawberries.
  4. Beat cream cheese, sugar and vanilla with mixer until blended.
  5. Once the cookie has cooled, invert it onto a flat baking sheet; carefully remove foil. Turn crust back over onto the pizza pan or other serving dish.
  6. Spread the cream cheese mixture onto crust.
  7. Top with berries.
  8. Refrigerate or serve immediately

 

TIPS:

  • If your cream cheese is too cold and stiff, microwave it for 10 seconds.
  • Double the cream cheese, sugar, and vanilla for an extra creamy layer (you may not use all of it).
