RECIPE - 60. Chicken and Strawberry Salsa

Stop what you're doing and start chopping some strawberries! This salsa-topped chicken is one for the books. Marinated for a bit in a salty brine and topped with sweet, tangy, and spicy salsa, your chicken will come out a winner!

  • 3-4 chicken breasts
  • 1 bottle of New Primal Original Marinade
  • 1 pound of strawberries, diced
  • 1/2 green bell pepper, diced
  • 1/2 red onion, diced
  • 1/2-1 jalapeño pepper, seeds and membranes removed, diced
  • 2-3 tbsp chopped cilantro
  • Zest of 1/2 lime
  • Juice of 1 whole lime
  • Pink salt to taste
  1. Pour the bottle of marinade over the chicken breast and allow to marinade for at least 30 minutes.  If the chicken is very thick, use a roller or a meat mallet/tenderizer to flatten a little to allow for even cooking.
  2. Combine the remaining ingredients in a bowl and refrigerate until needed.
  3. You can grill the chicken, cook in a skillet, or bake at 375 for 25-30 minutes (this was our preparation of choice).
  4. Top the cooked chicken with a large spoonful of strawberry salsa.  (optional side: marinade a bundle of asparagus in the New primal marinade and grill along with the chicken).  Leftover option: cut up the chicken and place it in a lettuce wrap with the strawberry salsa. Yum!
