BBQ Chicken Salad

Spring is in the air and it's a good time to freshen up the menu! There are lots of ways to prepare this yummy salad. Cook your chicken on the stovetop or let it slow cook while you're out. Add some ranch if you wish or stick to the simple BBQ sauce. So many options to switch it up and please everyone!

  • 1 cup frozen corn, thawed
  • 1 can black beans, rinsed well
  • Juice of 2 limes
  • 1/4 cup red onion, chopped small
  • 3 tablespoons chopped cilantro
  • Salt & pepper to taste
  • 3-4 chicken breasts, sliced thin to cook faster
  • 1.5 cups BBQ sauce, plus more for garnish
  • Grape tomatoes
  • Spring mix salad
  • Ranch dressing


  1. Chop the red onion, drain and rinse the black beans, roughly chop the cilantro, and nuke the corn for a minute if you need to thaw it.
  2. Combine the corn, black beans, onion, lime juice, salt, and pepper. Cover and place in the fridge.
  3. Stovetop: Slice the chicken breasts thin so they’ll cook faster and remain moist. Pat dry and lightly season with salt and pepper. - Drizzle a tablespoon of olive oil in a pan over medium-high heat. Add chicken and cook until no longer pink (about 5 minutes on each side).
    • Crockpot: Place chicken breasts in a slow cooker with salt, pepper, and 1.5 cups of BBQ sauce. Cook on low for 6 hours.
  4. Shred chicken. If cooking on the stovetop, add the chicken back to the pan and toss with BBQ sauce.
  5. Assemble the salad with lettuce, tomatoes, chicken, and corn & bean salsa. Drizzle with ranch if desired.
