Mexican Nourish Bowl

If you're struggling for lunchtime ideas, this quick and easy nourish bowl will hit the spot. Simple to heat on the stovetop or in the microwave, it's a great option to take to work. Add chicken or eat it veggie-style. Double the recipe and you'll make your co-workers jealous all week long.

Prep Time: 5 minutes.         Cook Time: 2-5 minutes.         Servings: 2

Ingredients: 

  • 1/3 cup cooked brown rice
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup canned corn, drained and rinsed
  • 2 green onions, chopped (use the hollow, green parts only)
  • 1/4 cup salsa
  • 1/2 avocado
  • 3 oz cooked chicken, if desired

Directions: 

  1. Combine corn, black beans, salsa, and chicken in a bowl.
  2. Microwave mixture for 1 minute or sauté on the stovetop until heated through (about 3 minutes).
  3. Add rice to bowl and stir.
  4. Top with green onions and avocado.
