GGS Smoked Ribs

  • 4 oz olive oil
  • 1 full rack of pork ribs
  • 1/2 cup of light brown sugar
  • 1/3 cup of salt
  • 1/3 cup fresh cracked black pepper
  • 1 Tbsp garlic powder 
  • 1 Tbsp paprika
  • 2 green onions (sliced fine)
  • 1 cup of peanuts (chopped)

  1. Place your ribs on a large baking sheet and lather both sides of the ribs with olive oil.
  2. After coating the ribs in olive oil allow to sit while you make the spice blend
  3. Add all spices to a medium mixing bowl and combine thoroughly. 
  4. After combining the spices together, generously coat both sides of the ribs.
  5. Once the ribs are coated in the spices, place your ribs on the middle rack of your smoker set to 250 degrees. Add in your smoking chips (I used a blend of 75% cherry wood and 25% hickory)
  6. After your ribs have been smoking for 2 hours flip them and allow to smoke for another 2 hours. 
  7. After they have smoked for (4 hours total) wrap in foil and allow to smoke for one more hour. 
  8. Remove ribs from the smoker and allow to set for 8 minutes in the tin foil to soak up any juices. 
  9. Once ribs have set for 8 minutes coat with your favorite BBQ sauce, garnish with sliced green onion, and chopped peanuts.
